Noel's Hot Chocolate

Noel's Hot Chocolate

 Ingredients:

1 1/2 Tablespoons(8 grams) - Dutched Cocoa Powder
1 1/4 cups(284 grams) - Whole Milk
1/4 cup(57 grams) - Sugar
1/2 Vanilla Bean
1/4 cup(35 grams) - Semisweet Chocolate




Instructions:
1) In a medium sauce pot place the cocoa powder.
2) Slowly add the milk in small portions, whisking inbetween each addition of milk.  By doing this you will be able to prevent clumps.
3) Once milk is fully incorporated add the sugar and vanilla bean(vanilla bean is optional).
4) Heat on stove until hot but not boiling.
5) In a mug or small bowl place the semisweet chocolate.

Then pour roughly 1/8 of the milk/cocoa mixture onto the chocolate and let sit for 2 minutes.(You want to use just enough milk/cocoa mixture to melt the chocolate but not create clumps)
7) After 2 minutes whisk together the now melted chocolate and milk/cocoa mixture and then add that back to the rest of the milk cocoa mixture.

Let cool to about 150 degrees and serve.  You can also add whipped cream for a nice touch and flavor.  Caution..hot chocolate is hot!
